Now, before I say anything, let me make something clear: I love the game the way it is, and the development path it's taken, despite it not being in tune with the original theme of the game. Minecraft's potential is huge, and there's no shame in deviating from the original game design when there's simply so much that can make it better.
However, there are some people who lament the loss of the game's original design - those that feel that Minecraft doesn't really feel like 'Minecraft' any more, due to the addition of content like alchemy and enchantments. These people were much happier with the game before the developers started adding the newer content, and probably wouldn't mind overmuch if it was taken away.
My suggestion is this: Split your content into seperate components based on the category each piece falls into. The base game is just Minecraft - no enchanting, no alchemy, no Nether, no End. Add a content pack for the Nether, which includes alchemy, one for enchanting, one for the End, etc. These would all be free, as they're still actual parts of the whole game, but it allows for people to pick and choose which content they'd like to have on their client. Most of us will still go the whole thing, but this setup allows for a bit of customization of one's game experience.
This may or may not be a good idea, but the suggestion is there. In the end, it doesn't really hurt anyone to do this, and provides at least a small benefit for those who dislike the newer content.

I don't think that's really necessary, because it's pretty easy to choose not to build magic things or to avoid going to the nether and the end. Even the new structures can be turned off.
True, true. As I said, may or may not be necessary... might be useful for server hosts who want to stick as close to vanilla as possible, though, without going through the trouble of coding plugins for that purpose.

Again, the players can choose to not use the new additions. Sure, they may not have control over the generation coding without the use of plugins and mods, but it is their choice to use the new content or not. Whether they wanna use it or not is their choice. If you don't want to use it, fine. You don't have to downgrade because of it, just ignore it. Like me, I choose not to use potions and I choose to not enchant my stuff, sticking with pistons and earlier. If you don't want the new features, just don't use them. At least use the latest MC builds (Official builds, the snapshots are unofficial builds even though Mojang releases them) for the bug fixes to the previous content.
