So, here's an idea for the Splash Potions, especially to use the positive ones in Single Player. What if the Splash Potions could also affect things like Boats? One quite useful option would be to have the Potion of Fire Resist and strike your boat with it, making it enchanted for the duration or until it is broken. It would mean that you could traverse the vast magma seas of the Nether with a boat for a time, but you'd have to be careful not to get yourself stuck out there.
As a way to tell you the effect is running out, the boat could glow with a different color maybe 30 seconds before it is about to die out, so that you don't suddenly lose your boat and drown in lava.
Would it still be a good idea if you could use other potions, say, speed? If a boat could only take one enchantment at a time it would keep you from being able to drop Speed and Fire Resist and...I don't know, Resistance so it wouldn't break upon hitting the ground.

Also, should it affect minecarts?
Sure, I mean you'd have to program it separately. Not every potion would be able to be applied.
Regeneration on a Powered Minecart should make it self-fueling while the potion lasts. Strength could make boats more durable. For Minecarts, it would be fun if it made them able to smash aside mobs on the tracks.
