I heard about the super-flat map type, but it's too flat for Survival: there's no trees! And there's no variation, and no chance to mine minerals.
So I propose a less flat map type, Flattened. All the land is at sea level (64), and all the water is one deep (63). Biomes would still be generated on the flat land, with topsoil/sand depth, or lack thereof, generating normally as per the biome. Maybe, possibly, no caves or ravines either.

Well I play survival, and with the things I make I need large clear areas too. In fact, right now in my world I'm working hard on making more area for my buildings and tree farms. Since I play with IndustrialCraft and Buildcraft, there's a lot of machines and I need space, lots of space. And flattening land is boring.
