The new mountains are horrendous. I agree with you.
If you want, I bet you could use the generator from 1.7.3, and then add the map into 1.1.0
I agree, and I do notice that "bluish" tone. It's quite ugly especially with the lack of trees.
Minecraft's biome code really needs to be less varied in grass color and more in how the landscape, foliage, and trees look.
Grass color isn't in the biome code, it's in a .png file in the misc folder called grasscolor. The only color that can't be altered in texture packs right now is swamps. If it bugs you so much make a custom texture pack with the grasscolor changed to whatever you'd like.

Texture packs use grayscale grass textures modified by what the color of the biome is. So no help there.
Im not asking for bright green either, just a slight tone of saturation and hue to make it easier on my eyes.
You can modify the textures the biomes use. I believe it's foliage.png or something.

foliage.png is for leaves I think.
