This would naturally only be for Hard mode, or something.
So you have your Diamond Armor, your Diamond Sword, your Bow and arrows and so on, and you step through the portal into The End. You carefully avoid looking at the horizon in case you tick off any Endermen; they'll just waste your time at this point. You scan the skies for the Ender Dragon (I don't know whether it spawns right away nearby or what, but that's not the point). You look around in the distance, and see nothing.
Then you look directly up. Suddenly a large patch of sky swivels around on a neck you can't see. The sky now has glowing purple eyes. A mouth opens, only identifiable by the fact that a mouth shaped piece of sky is now purple.
Aaaand that's all I got. Basically the idea of a bigger, badder Endersomething that may or may not be able to instakill you. Completely avoidable of course, so long as you don't look directly up in The End. And if the idea of a Godlike mob is too much even for Hardcore mode, then at least putting purple eyes in the sky would be something, right? Just to capture that moment of terror when you anger an Enderman and are underequipped to deal with it.

So.... Its basicly a big enderman... wow. Creative.
The ender concepts finished, it needs no expansion.

No, there has never, ever been a sandbox game with a story or ending... except Grand Theft Auto... and Saints Row... and Red Dead Redemption... and Crack Down... and Assassins Creed...

The statement above is false.
Eldritch abomination kind of stuff.
But that's just me.
