We know Adventure mode is going to be launched. But what is the purpose of it? Simple -- You have to defeat each boss to progress through each dimension. The objective of Minecraft should be to find what is the meaning of life, the universe and everything. As soon as you create a new world on Adventure mode, you will face the End poem. However, every single word of it is scrambled. And it is shorter than the current one. However, there is are few words that you can understand. These are:
Then, you will spawn. When you spawn, you can't make a Nether portal. I mean -- You can make the frame, but as soon as you light it with fire, it will explode. And a message will appear, with all the letters scrambled, but some words appear: "Defeat Giants Then Proceed Nether". You can see that you have to defeat Giants to proceed to the Nether. That is just Stage 1 of Minecraft. Only on Adventure Mode, there will be a new structure generated. It is a giant, I mean -- GIANT tower. On the top of it lies the Zombie King, the unused Giant mob. To find it, Mojang could create some sort of item that shows the direction. Inside the tower is 8 rooms. Each of them lies every ammount of Zombies.
The 8th floor is the roof of the tower. On it lies the King Zombie. When you reach it, a green bar above the screen will appear, with "Boss Health" on it. Each of the 4 dimensions haves it's boss health color. The Overworld's is green. The boss haves 50 health points. He can split your health in half if he attacks you.
Once he is defeated, he drops 5,000 EXP. Points, plus 5-9 Rotten Flesh.
After beating the King Zombie, you can proceed to the Nether. On the Nether lies the 2nd boss. Right after entering the portal, you will face the next poem. Here, more letters are available.

You can see that the 2nd boss is the Magma Cube, and the next level is the Sky Dimension. To find the next boss's lair, Mojang should implement another item that shows the way. The lair of the Magma Cube is a massive Nether Fortress. But, this Fortress isn't like the others. It got several rooms, with Ghasts and Magma Cubes guarding the outside, and Blazes and Pigzombies guarding the inside. You have to break through the front gate to enter, then explore through the maze to find the back of the fortress. The back of it is a massive pool of lava, with some Nether Brick Fences sticking out of the lava. On top of these skinny pillars lies some nether brick blocks to make it easier to step on. After these jumps, an Netherrack island with a lava pool in the middle awaits. When you reach it, a GIANT Lava Cube will jump out of the lava, then a red bar with "boss bar" written above it will show up. Each of the 4 dimensions haves it's boss bar color. The Nether's is red.
After killing the Lava cube, it will drop 5 Magma Cream, and a weird item, called "Dusty Pearl". Crafting it with Bone meal and a Water bucket will craft into an weird pearl called "Sky Pearl". You can get the bucket and bone meal back(Because you used the water bucket to wet it and the bone meal to help cleaning the dust). Right-clicking the Sky Pearl will instantly warp you to the Sky Dimension. Then, the end poem will appear again. This time, the available words are:
You are the chosen one. Defeat the bosses to progress through each Dimension. Defeat the Creeper God to progress to the final judgement.
All the words are reunited. You have to defeat the Creeper God to get to the final judgement, also known as The End. The Creeper God is a very powerful creeper. He is a blue creeper, and he got arms. He got full Iron Armor, but that don't affects his health. His home is an island which the grass is replaced by diamond blocks, and the dirt is replaced by Gold blocks. The stone is replaced by iron blocks. Mojang could work on an item that could show the way. Once you reach it, the Creeper would suddently fall from the sky, and thunder would strike around the island. He is the only boss that don't attacks by charging. He, instead, uses thunder to strike you, and often summons 2 Creepers. When you reach him, a blue bar would appear on the top screen, with "boss health" written above it. Each of the 4 dimensions haves a boss bar color. The Sky Dimension's is blue. After defeating him, he would drop 3 Gunpowder and 2-5 Iron Ingots. You can use the "Sky Pearl" to go back to The Overworld, but you will still need to find resources to reach The End. When comming back to the Overworld, you will meat another of the poems.

The Ender's is purple. As you can see, the Adventure Mode gives Minecraft 3 more bosses, with additional purpose for beating the Enderdragon(which of currently haves no purpose to beat). I like your idea of more bosses, especially bringing back the old giant mob! But in my opinion, the nether boss should be a King Ghast. A really big ghast with a crown, usually accompanied by blazes or other ghasts. Also your TL;DR is very intelligent.
The sky dimension's metal is gamebreaking, and minecraft isn't that specific with addventure, you set your own goals. I like the zombie and nether bosses, but not the adventure mode.
Adventure mode, imo, should be more centered around finding artifacts and lost civilizations(even finding old written scriptures for clues). I would put bosses in them but they wouldn't be giant anything, just a large something. Maybe like the height of a ghast except like a stone brick golem or like a big centipede.
Actually, I would prefer it if those bosses were in regular Survival/Creative, and you can only fight them if you defeat the one before. Adventure Mode should be something else.
