Seems like a good idea to me. Although, shouldn't it be that for starving, the player is touching its arms to where the stomach would be, rather than the chest? Also, with kicking, how would you see that you're kicking in first person? Other than kicking, I think this would be a good idea, plus stabbing a creeper with a sword would look pretty cool.
Also, I think Terminal_6 has a good point with the dropping/throwing animation. Maybe it could be something simple, like making it use the punching animation when you drop or throw something.

Starving:
Appears when you are starving.Makes your arms touch the center of your chest. The longer the starving, the slower you get, too.
Attack:
Instead of just plain ol' punches we should have more attacks, like kicking and when holding a sword; stabbing.
Burning:
Raises arms, makes you run (even when hunger bar is low), and head shakes more noticeably.
Drowning:
Raises arms, kicking legs contantly, slowly going up if water is 3 or less blocks, slowly going down if 4 or more blocks.
Dieing by Attack:
Moves slowly, left leg limping, and left arm holding left leg, putting pressure on it.
