I also think there should be terrain types such as normal, desert, tundra
and instead of calling it terrain varieties, elevation difference or something

Personally all I would like to see is a "flat" "rocky" and "normal" option.

rocky meaning lots of cliffs and mountains
normal being a random mixture of the two

Cave density. Lava/water options. Surface lava/maximum lava layer. Cloud/sky/background options. Gravity options.
Those are for Both Modes, not Creative Mode Only. Not bad ideas, though.
It would be nice to be able to tweak the random map generator to get something specific.

No, creative mode is basically... map modifying mode. It would be stupid to remove the only game element in the mode o_O
