So, I've come up with an idea for a safe that would be griefer-safe.
The Vault of Holding is actually a small gateway to a pocket dimension. That dimension could either be protected by a password or simply linked to the player.
The vault can be destroyed, but the items inside will simply sit in their pocket dimension until another vault is placed in the same spot, at which point they can be accessed again.
It would be a fairly expensive item to build, probably requiring multiple stages. I was thinking 8 iron to create the case, 8 obsidian to create the internal portal, and a "control mechanism" that requires 5 diamonds and 4 redstone (placed in the same pattern you use to make TNT).
A vault dimension would be a pretty good idea considering:
Regular vaults would be destroyed even if it destroyed the items with it because greifers are assholes.
If a vault wouldn't destroy the items with the vault it would defeat the purpose.
If a vault was invincible it would be made into houses or walls that could be easily exploited.
Actually, this may actually have a use in singleplayer. What if it worked like piggybanks or safes in terraria? You could have a vault network so you didn't have to carry everything with you.

True.I think their should be some other challenge to destroying it, since if a griefer destroys it, you still loose all those diamonds, obsidian, and iron.
Seems like a solid idea, the only problem I can think of is how the game would keep track of multiple pocket dimensions in the same server/world.

How big would it be? Could you expand it if you brought materials like the islands in skyblock, or would the entire thing be encased in adminium?

Easy- the vault block is just a simple block with no data. The data is stored in the same place as where chest data is stored, with two key values- The coordinates of the vault, and the player (or password) trying access it. When a player tries to access it, the game simply looks to see if there's any data for a vault at the coordinates of the block registered under the player's name. Multiple data sets could be stored for the same coordinates for different players.
The 'pocket dimension' thing is really just flavor text- it would function like a chest. The game wouldn't be creating separate chunks for the player to go to or anything.

It's a tricky thing to balance. If it's too hard to destroy one, it becomes a griefing tool. In this case, I'd go by the "How much damage could a griefer do elsewhere with the same effort?" rule.
If he's already in your house, he could probably break 5 diamonds and 8 obsidian worth of stuff pretty easily. With a game like minecraft, nothing short of a protected zone where only you can build/break blocks is going to stop a griefer. Even then they'll probably come up with something.
Sorry, I should've worded that better, I meant the size of the dimension, but you already pointed out that you didn't intend for there to actually be a new dimension per block.

I think the diamond-encrusted redstone-powered insanely-expensive control thingamajig should be handheld, so you need one to activate the vault, but it's not lost if the vault is destroyed. In other words, you use it to enter your vault, and if you have to replace said vault, you can go in with the exact same device.
