I've been working with redstone for awhile, and I've used water-activated switches before, (using boats+presure pads) But You have to reset them, and they look sort of ugly in my adventure maps. Therefore, I think the easiest solution would be a water-activated switch. If water goes over the sensor, all blocks around it get redstone-charged. This would be good for aqueducts too, so you don't lose elevation transporting water. A good crafting recipe:
Where... = Redstone = Bucket of Water
(You'll get your bucket back)
