Compared to Cows and Chickens, pigs and sheep are a bit lacking in my opinion. I have some possible thoughts on what could add one more item to both the Sheep and Pigs drops. Feel free to add thoughts or suggestions.
Cows
Steak
Leather
Milk
Chickens
Feather
Chicken
Egg (yes it lays eggs but it is still an item you farm from it)
Squid (added)
Ink
Calamari!
Sheep
Wool
Lamb Chops (Obviously)(Same attributes as pork or steak)(Or bones as another person said, giving us a way to harvest bones!)
Pigs
Pork
Ham Hock (Pigs foot aka Trotter)(Edible with very low healing attributes, it can be dropped on the ground to attract monsters)
The Ham Hock is basically Monster Bait really it would attracted a monster within a predetermined distance to come to the item. The item can be held to attract monsters within say double their normal sight limit of the play? And if dropped (or used?) it will attract monsters to it for a few seconds, long enough for the player to try and get out of sight. The item it self would have a preset time of how long it would last once dropped, it has one use so once it is used it disappears from inventory and cannot be picked up again.
Two possible ways of use, one would be for the item to be right clicked on the ground to place it where it would become a sort of beacon. The second way could be that it would just be a toss-able item you throw on the ground and attracts the monsters for a short time before disappearing. Either would work I think.
Go ahead and offer your ideas or possibly alternatives for items that the sheep and/or pig could drop to even out their uses.

I'm surprised you can't get calamari from squids. If anything needs to change with pigs, it's their chop drop rate, it's pathetic.
I can kill 5 pigs and get 2 pork chops (if I'm lucky, then kill 5 cows and get 10-15 steaks.
I thought sheep needed another drop item, but once they can re-grow their wool, there's no point in killing them. For true survival, I can see a desire for them to drop food or even bones for bonemeal.
I personally think it'd be cool if you could light sheep on fire and they'd chase the nearest monster and explode when they died from the fire damage.

If any mob needs more features, it should be squids...
