How about a type of potion, that obviously would only be useful in splash form, that can transform one type of block to another.
Say you have an enemy secure in their obsidian base...All but unpenetrable (In he old days at least)But what's this? A transmutation splash potion. You throw it at their house and it turns into fast mining dirt. Or maybe instead, you throw it at their roof and it turns into sand and collapses on them!
Of course the potion would have a set thing it transforms stuff into. Not just random. Probably in the ingredient list?
I think something like that would remove the functionality of fortification in SMP. why surround your base with an obsidian wall if anyone could just lob a potion and nullify your entire defense system? Obsidian is powerful because it's so hard to beat.

I don't play multiplayer so I don't include what griefer's do into my ideas.
I'd rather have, what I believe, is a good idea. Those that will grief will still do so regardless of the potions existence.
I'm sure it could have lots of functions. Turning a hard structure weak was only an example. Maybe turning dirt into cobble, or even obsidian itself could be another use.
It's just a tool, the player decides how to use it

B ) Sounds over powered....
It's a potion, which means gathering large number of supplies and time.
It doesn't turn EVERY block into whatever, just in a small radius of where the splash potion landed. I don't think it would be that overpowered
