Perhaps one of the side dimensions could be the idea of the "ruins dimension" that's been flying around as of late. A dungeon dimension for the Overworld perhaps, with the portal being found in Abandoned Mineshafts?
Also, perhaps one of the side dimensions for the Skylands could be an ice dimension. You know, something among the lines of Everfrost or Arctic Isles suggestions? It could work for the Water Dimension too.
Or how about Space being another Skylands side dimension? The portal could be semi-static, be made out of something from the ruins dimension, and can only be built at high areas in the Skylands. It's not like we're going there via a rocket or anything, so it would fit into the theme perfectly.

I know, but my logic is that higher elevations tend to get colder. Perhaps it would require a visit to both dimensions to gather a specific material, then you head to one dimension, head to a temple/dungeon, and then activate the portal there? Perhaps an Icestone-esque ore (the ore comes from the Aether mod, btw) found only at high spots in the Skylands, which you then craft together with something in the Water Dimension, then you head through a temple to find/make a portal, THEN you go to the ice dimension?
Also, since this idea of side dimensions is getting a bit complicated, how about an item that returns you to the Overworld? It's not very hard to balance it out, since Mojang could easily implement warm-up times or other limitations. Heading back to the overworld just to get a usable alternative to ice from the Ice Dimension would be a pretty long walk.

Well, my original dimension abort item was a one use only item, that balances it considerably.
Maybe we could call it "Eye of earth" since it sends you back to the overworld.

What about Lapis? It wouldn't hurt to give it a use. And it won't be hard to exclude it from all the other dimensions.

So, 1 ender pearl in the middle, 4 units of lapis surrounding it, and saplings in the corners?
The lapis could represent oceans, and the saplings could represent continents. The pearl represents the Earth's round shape.

ohhh, I know that, I'm talking about making a portal (titanium maybe), that when fitted with the stone of another planet it would take you there, so basically the planets could be new dimensions
Also my little brother gave me an idea last night for a nether mini-boss...
A floating eye with 8 arms and a fanged mouth (maybe called Demon Spawn) that floats around some distant pit of the nether, and attacks by shooting fire, slashing, and biting you.
The (rapid fire)fire balls would explode. The slashing would act just like our sword-spaz-attack, and hold us back, and the bite would poison. Once at low health it will start teleporting every 10 sec to get away. Only way to kill it at this point is arrow or snowball. When you kill it, its arms catch on fire and it spins in circles , then blows up like a charged creeper. When killed, would drop 2-4 mob eggs (only way to get them out of creative) and they could be used to make craftable spawners like this:

my otherworld dimension idea is the closest i've been able to come up with...
basically it would have many features like it would be dark, all the time due to the heavy clouds on this dimension (which means no grass or plants could grow here). second, you could jump 3 times higher and fall slower due to the reduced gravity. third, the unique atmosphere extinguishes all fire, torches, redstone torches, and furnaces and evaporates lava. fourth, there would be many new ores but iron and redstone would be here. and fifth, instead of a furnace, you would make a radioactive oven with its feul would either be redstone, uranium, or plutonium. and you could smelt two ores at once or even combine them to for a new non-minable ore (like copper + Iron = Bronze or Uranium + Iron = Plutonium), but you can't cook food on it. and lastly you would use lanterns for light, which can be made with either Iron + glowstone dust or Iron + redstone dust. the redstone lanterns would power redstone circuits just like redstone torches.
The skyland's portal should be horizontal at the highest point of the overworld in a 4 x 4 square (don't know what it should be made out of though.
The water dimension could be called aquaria or aqua realm like someone mentioned and the water dimension could have a frost biome which could be a biome with ice and ice caves everywhere.
Ps what is the water biome going to have and involve and what benefits will we get from it other than a boss battle and aesthetics
