Everything you see here that is EXACTLY like the Enderdragon except for the Kraken's death, having a portal back to the overworld, the Undersea Chest, the Abyss, a new dungeon, Ningens (not the drops), and a Ningen's behavior (I may have forgot some things) , is just a substitute. It will be replaced in the future when I come up with new ideas.
The Abyss
The Abyss is an undersea dimension. There are no "water blocks". Instead, the "air" is textured to be a dark underwater background as if you were on the bottom of the ocean, with a rippling surface WAY above you and minimal light coming through. There is gravity the same as the overworld, except you are as slow as underwater. Unlike water, you cannot float/swim in the Abyss. You will drown, except...
Wearing a Pumpkin on your head will prevent drowning.
Don't worry about knowing to wear a pumpkin. The portal to The Abyss is underwater, so you will already be wearing one.
The Abyss is dark and deep, so not much life lives down there. There is a new type of sand, called Deepsand. It's a dark grey sand with a slight tint of olive green. Using any tool other than a Shovel will just yield normal sand.
If you dig underground, soon you will come across Bedrock. Hence the name The Abyss, the Deepsand floor is endless and boring.
Small Sea Urchin like plants litter the Deepsand. They are called Deepspines. If you touch one, you are damaged like a cactus, but that is the only similarity to Cacti. You can only harvest them with shears. Otherwise, it just destroys the Deepspine. It's best to be careful around them or remove them.
Deepkelp grows in bunches, creating "rain forests" They can be from 2 to 10 blocks high. Must be harvested with shears, and grows like sugar cane, but faster. It can only grow in The Abyss.
---Getting to the Abyss
There will be an Undersea dungeon with a new monster called a Ningen - a Japanese cryptid. There spawn from Ningen spawners. They wander the dungeon, always staring at you, unlike Endermen. They are neutral, so they only attack when you do. If you do get one to attack, they will swim at you at a fast speed and deal of damage. They have x20 like Endermen.
How are they dangerous? Well, the dungeon will be littered with treasure chests. Though, there won't be any diamonds, because the dungeon is easier to find and conquer. When you open a treasure chest and a Ningen is watching you, it will become hostile.
The portals are 3x3x3 triangles with a 5x5x5 portal frame. This is because it represents the "Bermuda Triangle".
The dungeon's rooms are designed to make a map similar to a triangle. In all three "corners", there are chambers with a kelpy statue and a floating, rotating black pearl sprite (not an enderpearl recolor) that gives off particles. There is also a Ningen spawner. If you start smash the statue (which takes a while, like obsidian with your hand before the new updates) it will spark watching Ningens' hostility. If you destroy the spawner, kill the Ningens, and block the entrance to the chamber to protect yourself, you can finally destroy the statue and the respective corner of the Abyss Portal will the same black pearl in it. If all there statues are destroyed, the portal will open.
---Mobs
There are Ningens everywhere in The Abyss, like Endermen in the End. Plus, there are squids. Lots of squids.
---Boss
There is a boss, namely the Kraken.
Appearance-
Imagine a giant pale red rectangle. Add two MUCH smaller rectangles; the eyes. They are yellow with a streak of black; the pupils. Imagine 8 tentacles made up of 5 long, narrow rectangles. Each one is shorter than the previous. The rectangles allow the Kraken to curl or stretch it's tentacles. The bottom of the tentacles have suction cups. Plus, the Kraken is huge.
The Kraken is slightly submerged into the ground.
Behavior-
The Kraken will move like a real Octopus or spider. The Kraken is slow, but fierce. It has x50 health, since it's not the final boss. There is a green Boss Health bar to represent that it's not the final boss.
The Kraken will flail it's tentacles when you are close. Arrows won't work underwater, so that's not an option. If you are hit with a tentacle, you will be knocked back, but not damaged. If you stand still and vulnerable, the Kraken will curl one of it's tentacles around you and lift you in the air. The tentacle will constrict you, slowly damaging you. If you slash a tentacle joint, it will break off. It will eventually grow back in a poof of smoke. That is how you escape it's grip.
If you manage to slash off a few tentacles for a second, you can make a run for it to the body /head of the Kraken. Slashing a tentacle will not damage it, but slashing the body/head will.
After Defeating the Kraken-
The Kraken will grow back any missing tentacles and flail them. It's movement will soon slow to a stop. A blue light like the Enderdragon's purple will shine out of the Kraken and the Kraken will fall apart in pieces, also like the Enderdragon. Half the experience that the Enderdragon drops will explode out of the Kraken. A bedrock portal, similar to the Enderdragon's will appear on the ground. On top is a fancy undersea Treasure Chest. Inside is a Small Chest GUI. There is a ton of gold nuggets, about 64, not necessarily stacked.
Going through the shining blue portal will take you back to your spawn point in the overworld; no credits.

The portal is also too End-like, as are the pearls. What could be fun, is a Purgatory Chamber. It is built in the Portal room you described. It looks like a large sarcophagus, perhaps 3 blocks wide and 6 blocks tall, made of glass. The back wall of this is has small holes in it. This is to place the Ningen Spines, which would replace pearls. Unlike the Ender pearls, entrance to the Nether is not necessary to add any special properties to the spines. When you walk into the spines once all of them are placed, you then go to the Abyss.
Also, a little hole in your original plan, even if you aren't a fan of mine, gold nuggets can be crafted from a single gold ingot, just as nuggets form ingots. Therefore, in your plan, access to the Nether is not a requirement.

Maybe when it constricts you, it could also slowly drag you into it's beak? That would make it more challenging, and if you get eaten, it kills you no matter what?

Absolute win. That would be cool. Well, if anyone takes this up, ill be happy to help with texturing.
EDIT: The reason I suggested the spines in the portal has to do with the name i gave it, the Purgatory Portal. I should have explained this more, but Purgatory is the instance of being dead and alive at once, and is often associated with the meeting with God. The Ningen spines would put you in a form of Purgatory, implying you are in a dream through your Abyssian travels.

Personally, I think I would prefer the Kraken to be something that is summoned by the player in the Overworld (perhaps after defeating the Enderdragon?) rather than adding a whole new dimension; the "boss-world dimension" idea is growing stale and personally I think is fitting for only the Enderdragon. Oceans would have to be much deeper of course (possibly meaning that world depth would need to be changed), but a Kraken fight in the Overworld feels more fitting than traveling to a whole new dimension.

There's a lot of games where after you beat the video game there's still new content afterwards. Chrono Trigger is an excellent example (at least the DS version). Personally I think it would be interesting to have you beat the Enderdragon, then a bunch of new summon-able bosses are made available. A bit like beating the Flesh Wall in Terraria except in this case you can only fight the Enderdragon THEN the new bosses open up.

He has a point. In Ratchet and Clank: Going Commando, after you defeat the gae, you can return to one of the first planets to find a secret boss. Pokemon games are another example, particularly the new generations.
I do support bosses after the final boss, but I'm trying to suggest a normal boss, which Jeb must still add.
true, true. Though, he does bring up a point of summoning. Now with the Abyss being infinite, finding and fighting the Kraken is more taxing. I propose a short summoning maneuver, that, when done in the Abyss, brings the Kraken to you, where it remains stationary, as detailed in the OP.

Exactly. The Minecraft Squids don't have beaks, so neither does the Kraken.
EDIT: Ninja'd.
Plus squids in minecraft kind of do, they just have a mouth with tons of teeth.
