There is already code for fleeing animals when you strike them. So what I am suggesting is implementing that code into hostiles so that if they get to a low enough point of health , they will activate that code and start to flee.

Add all of the monsters' healthpoints. If the group's total healthpoint reaches 1/4. They will start to flee. Same goes for individual.

Implementing this would just make it easier, and possibly more annoying, because you'll have to chase them for loot.
I think this idea would work well if it was implemented altogether with another AI upgrade though.
P.S they should retreat slower than they normally walk, because they're hurt, and you I think shouldn't have to chase them down after beating them.
Most of the enemy mobs were resurrect by the necromancy of an unknown source.
Their only jobs is to kill you. They have no mind of their own.
Creepers? Eh. Would kind of ruin the difficulty of it.
Endermen... I think that they were sorta conjured by the same person that resurrected the undead...
tl;dr: Bad idea.
