I like the ideas, but I think you could add to it. Maybe the miner zombie could pick up stone blocks, similarly to Endermen. As for the field grover idea, I think that could just be an extension on the NPC mobs. There could be gardeners that have similar characteristics.
On a seperate note, I think a "Miner" would fit in nicely with these ideas. It could look similar to the current villagers but have a dark grey robe. They could carry pickaxes and break blocks in "mines". Mines could be a sort-of structure spawning similarly to NPC villages and be the only suitable place for a miner to spawn in.

How about a jellyfish mob (so we have an aggressive water mob). There are already plenty of land mobs, and all are unique for now. One standard "infantry", one agile climbing mob, one ranged mob, one bomber mob, and one ninja mob.
Behavior: Found in tundra and mountain biomes, will actively attack chickens and pigs, along with wolves and aggressive mobs (Except Creepers). Do not behave in a group, attacking one will NOT provoke the others. Can be tamed with cooked/raw fish, moves very fast.
Tamed Lynx will still attack chickens, pigs, and other wolves (Except tamed) actively, but will refrain from attacking aggressive mobs.
Man-Lizard (I took this idea off my old jungle post)
Type: Agressive
Health: 10 hearts
Attack: 4 hearts
Behaviour: (If the Jungle gets re-added and made cooler) Spawns in Jungle Biome if you get too close they will start stalking you from the treetops when they get the chance they will leap down but if they cant reach you they will use their tail to grab you (this is where the air bar appears), Also attacks any other mob that enters their range
Drops: 1 Man-Lizard tail (if possible it could be used to make a grappling hook), and 3/5 Lizard Skin

Spawns in caves. Will attack the player if provoked. Can fly (duh). It's eyes glow in the dark. It can also spawn on branched trees.
Drops: 0-2 bat wings, which can be used to brew a potion of flight.
