Ok so I think snowy places are dull and nothing much can be found other than trees...

A castle is an aboveground structure which can be found in TUNDRA biomes and limited to 1 per tundra area and only happens when the area is big enough
A castle has nothing much but stone blocks for the walls and ceilings and inside, you can find several rooms and stairs to the next floor. Bookshelves, beds, and glass panes can be found in bedrooms. chandeliers (no light), tables and stairs (for seats) in dining halls. And other rooms could have other things too.

Chests; Book, Gold Ingot, any Leather Armor.
Spawner; yes; Snow Zombie (see mobs for details)
Kitchen:
Chests;Cocoa Beans, Melons, Pumpkins, Cakes, Bread, Cooked Fish, Cooked Porkchop, Cooked Steak, Cooked Chicken, Iron Knife (see new items for details)

Walking Knight Statue;
Spawns when a player walks in front of a knight statue and no one is looking at it
Health: 15
Damage: Easy Normal - 2, Hard - 2.5
Wears iron armor, nothing is inside, holds an iron sword
Neutral Mob; can be allied with by polishing it with right click when you are holding a cloth. Attacks when provoked.
Allied ones will attack hostile mobs and any other entity that attacks you (except creepers and blocks that became entites other than other Walking Knight Statues)
Drops 3-6 Iron Ingots
Snow Soul;
Spawns by monster spawner or in caves in tundra biome
Health: 5
Damage: Easy - 2, Normal Hard - 3
Almost completely transparent, colored light gray, floats and can change altitude like Ghasts.
Only damaged by light levels of 8 or higher; Avoids light
Hostile mob.
Drops nothing
New Items:
Knife; Crafted in this order (top to bottom): Iron Ingot, Gold Ingot, Diamond Gem or Cobblestone + Stick
Used for cutting cobwebs with right-click
Used for marking on wooden blocks (e.g. Wood, Wooden Planks, top and bottom surfaces of Bookshelf)
Deals more damage than hand but less damage than sword
Knight Statue; Cannot be crafted
When broken, makes 6 iron ingots
Like beds, this occupies more than 1 block but broken as one
Only obtained by creative mode
Spawns a Walking Knight Statue when walking in front of it while nobody else is looking at it
Occurs inside castles
Cloth; crafted by (only 1 item needed): Wool
Used to ally with walking knight statues; right click to polish
It becomes dirty when used; right click on water (even if it is not a source block) to clean; takes a while before it dries; cannot be used when wet
Animal Fur; dropped by killed wolves or any other furry animals, and snow zombies (they have fur clothes)
Used as decoration; placed on horizontal surfaces in the manner of rugs
Colored white (changeable by changing texture pack).
Snow places are dull and all that can be found are trees? Hmm... Sounds just like every other biome. And I don't really like structures just spawning. Kinda takes the point out of minecraft being a sandbox game.

minecraft is also about exploring your world, generated structures make exploring worth it, I always think it's pretty neat when I stumble upon an abandon mineshaft, or a dungeon.
castles are no different, however, restricting them to one biome isn't the best of ideas

but then again, how rare is it to spawn in a village? oh yeah, really freaking rare.
castles would be even rarer than villages, the chances of spawning in one would be slim to none
But it will be hard since there are also what you call "Monster Spawners"
i'd like it if theres snow golem guards
so you spawn in a castle, die and still respawn in the castle, die again and repeat until you get sick of being spawn killed
