What I think would be interesting in minecraft is a temperature meter. If you enter a snow biome the meter would pop up and every few minutes or so the meter would increase. If the player has to high of a meter the player would start to take damage until the player finds a way to warm themselves with a torch, fire, lava, ect.
(new thought) for all those people who find the food meter annoying and think this would be a bad idea, there could be a option to turn it on or off while creating a new map.
I want to see this as part of the vanilla game, on the necessary condition that you can turn it off in the Options Menu. I don't like forcing everyone else to play a certain way just because I'd personally enjoy it, and you ought to be able to turn off the Hunger bar too.
Honestly, I don't see why the Hunger bar isn't optional now. It shouldn't be tied to difficulty. There are hardcore players who dislike it and Peaceful players who'd like the added challenge but aren't allowed to use it without turning on enemies too. Yargh.
Anyway, yeah, the full compliment of bars would go like this: Hunger, Thirst, Temperature, and Sleep. (I think "Fun" would be a little too close to The Sims and thus is more of a mod thing.) All optional - you can turn on any or all of them if you like.
If you don't keep track of your Hunger and Thirst bars, you start taking damage (though I hope eventually the "damage from hunger/thirst" sound is different from "damage from mobs" sound and "damage from drowning" sound).
If you don't keep track of your Temperature, you can get status ailments: Hypothermia and Heatstroke. Hypothermia makes your hunger bar deplete faster, and Heatstroke makes your thirst bar deplete faster. In addition, Hypothermia makes you slower (movement and tool use), while Heatstroke makes it difficult to see and difficult to walk straight.
You cure Hypothermia by heat source (torches don't cut it), and Heatstroke by shade and water. You can avoid Hypothermia by wearing wool clothes, and Heatstroke by wearing some sort of desert gear.
If there's a Sleep bar, both conditions cause it to deplete faster.
If you don't keep track of your Sleep bar, you start slowing down a lot. It also depletes your hunger bar faster (so doubly fast if you're sleepy and have hypothermia). If you get damaged or get within a certain range of an enemy, you get an adrenaline rush that lets you move at normal speed (or even faster) for a short time (fight or run!), but that takes a big chunk of your hunger bar.

Temperature is everything, especially when your snow world heats up OR... worse, your dock and half of the ocean freezes over... as in 500x500 blocks of it.
I really do love the idea of this, but I'd rather it stay tucked away in a mod, such as the Seasons mod. (being outside in the Winter, in a snow biome would eventually start hurting you and vice-versa for deserts in the summer) It'd definitely help with the realism. Seriously, you can run around in the desert all day long and not be hurtin' or vice-versa in a snow biome, at night? However, as I said before, it's best this just stays in a mod.
In the event it is actually implemented, here's how I think it should be implemented. You eventually get hot and tired if you run around in Deserts, Swamps, and any other fairly warm biome during the day, especially during the summer, if seasons are added. (It'd just happen faster if it's Summer.) Running around in snow biomes and taigas, especially at night, with result in a frostbite-like effect. It'll both hurt you and slow you down, possibly like when a Mo Creatures Frost Scorpion attacks you or in the Seasons mod. (I'm not actually sure if that effect happens or not though.) The solution for the latter is warmer clothing. The solution for the earlier is only travel at dusk/ night.
