I strongly believe that with the addition of Enchanting and Potion Brewing, they not only made an already fairly-easy game (even on Hard) ridiculously unchallenging, but also "tempted" players to concentrate more on xp grinding than crafting/exploration.
My suggestion is to remove these two aspects and make not only random Enchanted items and Potions, but decorative items such as Paintings and more music disks available only through treasure chests.
In my opinion, the enjoyment level of the game would increase dramatically when, say after wandering the world in search of dungeons and strongholds, you open up a chest to find to your delight a glowing sword, pickaxe or rare work of art to be proudly displayed over your fireplace rather than spending hours of boring and repetitive grinding in front of an mob farm.
Oh, I agree with both of you that it's already past the point to remove these two aspects, but perhaps a compromise could be that any new Enchantments or Potion effects added through future patches only be available via chests.
I know it's all just wishful thinking on my part, but one can hope....
The reason Ntch added these nchantments is so that players would HAVE to concentrate on killing mobs at one point, rather than somone *****-footing around and getting a Silk Touch IIII on their pick, and to get it. Also, it gives players a challenge, thereby contradicting your idea that the game is ridiculously easy. It isn't Ok, at anytime you can get blown up from behind or shot. If you want a game where you ONLY buld, go on Classic. Another thing, if you don't like enchantments or potion-brewing, then don't do it. It's that simple. Oh yeah, and for making potions, are you saying having to go to a Nether stronghlod, fight a load of blazes, and gather nether warts to make a potion is easy?
One: in my game (on Hard), I was able to locate TWO Nether Fortresses where I was able to pick enough Nether Warts to last me the entire game without having to battle one Blaze to harvest them. But even if I had, all you have to do is pick a few and plant them around your Nether portal to create your very own unlimited Nether Wart farm.
Two: When I did find a Blaze spawner, all I had to do was place a cobblestone "ceiling" over it to keep them from flying out of reach. Then, after collecting a few Blaze rods, I retreated long enough to craft Potions of Fire Resistance (Extended) that allowed be to go back and basically slaughter them at my leasure until I had a chest overflowing with rods. That one Blaze spawner actually became my sole destination to go from lvl 0 to 50 without ever once being in danger of being killed.
Three: Your statement about "having to do nothing" to acquire an Enchanted item or Potion using my suggestion is flawed when you take in to account that just by traveling far and wide exploring caverns, abandoned mineshafts and Strongholds, you are guaranteed to encounter hostile mobs while searching for treasure chests. If anything, it's the programmer's fault... with the exception of Dungeons... that the chests you do find are rarely guarded by mob spawners.
Four: Sure, it's "my choice" to just ignore Enchanting and Potion Brewing altogether. In fact, I easily defeated the Enderdragon while wearing an unenchanted set of diamond armor, arrows and a diamond sword with only Knockback I on it (which didn't work on the dragon anyways). I didn't even need potions because I didn't take ONE half-heart's worth of damage during the entire fight.
So, for a smart player who keeps his/her wits about her, the game... in it's current state... IS ridiculously easy.
