Once you get to the End and slay the enderdragon, you "beat" the game.
Afterwards, you find a portal back, complete with bedrock and egg. So what should the egg be used for? Well, how about red dragons? The second type of dragon, promised by Notch.
To obtain a red dragon, you need to purify the egg of evil. Try to incubate it without purification, and it
explodes. To purify the egg, you must combine it with a diamond block. Costly, I know, but the results are worth it. Afterwards, you need to place it 1 block above a netherrack fire until it cracks. Then, once you destroy it, you get a hostile red dragon. To tame it, you need to feed it. To feed it, you need to sacrifice 1 of each cooked meat and 1 magma cream. Once tamed, red dragons can be ridden with a saddle. The red dragon can be steered with wasd, forced up with the scroll wheel or up and down (you can't place blocks when riding), and landed with "l". Red dragons drop a red dragon egg when killed, which is incubated to make a new dragon. Once killed, a new egg spawns upon loading the egg, allowing you to obtain multiple dragons.
Well, then, no to flying in SMP. Dragons could be used for EXP farms, instead.
If something can only be in SSP, then there isn't really a point to it, is there? I mean, why have something if you aren't going to be able to go on a server and show off?
I think eggs should be display only, as to how many times you've beaten the game. There could even be something in player statistics as to how many eggs you have collected.

Well, first, in SMP, it could still be tamed and forced to attack. Secondly, why use eggs as a trophy of sorts? Why not something that would make more sense, like a dragon head?

If it can be tamed, then don't you think some griefer is going to /give himself 100 eggs and destroy everything?
And why is it not sensible? I fail to see the logic behind a dragon's head being a better trophy then an egg. What kind of weirdo wants to hang a head on his wall in Minecraft anyway? No, I think more people would prefer the egg.

Not the dragons, the people.
Eventually with this idea, someone is going to just grab a dragon and buckets of lava and literally rain down fire.
You could do the same thing with enderdragons, or creepers, or mob spawners, or TNT. There will always be griefing. That's no reason not to add a feature.

It is irrelevant what people can do to grief currently.
It is relevant that riding Red Dragons can significantly make griefing easier. And in your idea, it is certainly relevant that unlimited Red Dragons from eggs makes it easier to do a few things with griefing:
Come in when no one's on, grief, then pack up your dragon in it's egg and leave.
Hide the fact that you are the griefer by hiding the egg, which is only one block as opposed to an entity.
Have unlimited griefing opportunities by a continuous cycle of hatching and killing along with the above mentioned items.
Plus, even striking out the griefing argument, I am in no way ready to brace myself for noobs shouting "I HAZ DWAGIN FAER MAH!" and generally flying around, being total gits.

Look , unless a person can give themselves items (which, on a lot of servers, isn't granted for a while) they would have to go to The Nether, then a stronghold, then the End and kill the enderdragon, a mighty feat, and then, on top of all that, give it a diamond block and a saddle, all to grief what they could do a lot more easily through normal means. The red dragon is intended as a reward for beating the game, and is accordingly powerful.Plus, it could probably be made that only ops, or those given permission, could ride dragons.

I don't know where you have been, but hackers break in all the time and use commands. Plus, they can also use portals created by previous players to reach the end. Speaking of which, if you're good with a bow and patient, then you can defeat the Enderdragon easily. This is not even counting people who could steal the eggs from others, since if someone can place it over Netherrack then it should logically be able to be destroyed and replaced. Or someone could just steal an already saddled dragon.
And if we made it a permission, then what's the point? Logically some non-OP'd player will beat the game eventually. And what would they get? And egg and a dragon they have to give away because they can't use it. At least if the egg does nothing but show off as a trophy, then it's pointless to steal and everyone has a chance to show off.
