To give the game more "life", I think that certain blocks and mobs should be able to exist in different colors, just like grass and leaves do. The color would be chosen at random from a color palette, sort of like the biome palette grass and leaves use. Here is an example using pigs and mushrooms (scratch the white mushroom):
Animal breeding could work like this: two points get placed on the color palette; one for the father, another for the mother. The child mob would be a random color found on the line between the two points. Selective breeding ftw.

One difference between your idea, and the mod:
The mod uses different skins for all the mobs, and yours uses a palette. Also, Randomobs: yours includes mushrooms.
There should also be the following in your suggestion:
Zombie skin tones (brown to green)
Skeleton bone tones (grey to white to beige)
Endermen skin tones (black to purple to blue)
Silverfish tones (grey to white to dark grey (black))
Squid colors (purple to blue (current) to pink (real life) to black)
Flower tones
Rose (red to dark red to pink to white)
Dandelion (yellow to darker yellow to brighter yellow)
Cow skin tones
Brown (black to lighter brown)
White (white to lighter brown to black) This will allow for pure black and pure brown cows, like in real life, while excluding pure white cows (which don't really exist)
Picture frame tones (black to light grey to brown (wood) to golden rim)
My conclusion: with (or without)my ideas, you're idea is better than randomobs.

Different than sheep, because sheep don't use color palettes. Also, they wear wool "armor", pigs and mushrooms don't.

Texturing would be just as easy, if not easier! Besides, there is a handful of "single colored" mobs and items in Minecraft.
