Currently the cauldron serves the purpose of turning an infinite water source into 3 water sources. Whoopee.
As of 1.9, you can use potions on mobs. Though, you can't use it on items.
Right clicking on a Cauldron will open up a GUI that looks like a furnace, but the flame is replaced with the brewing bubbles.
In the fuel slot, you place the potion. In the other slot you place the item, or another potion. The Cauldron needs to be filled with water to work. The more water, the faster the mixing. The bubbling works just like the Brewing Stand, slowing mixing the item with the potion. Why is this useful? Look at this small example list:
Potion of Poison + Any Raw Meat = Rotten Flesh
Potion of Regeneration + Apple = Golden Apple
Potion of Poison + Arrows = Poison Arrows (give spider poison upon contact)
Once the potion is added to the item, the potion bottle is emptied. You CANNOT use Splash Potions in the Cauldron.

What do you think? :wink.gif:
Good idea, added!
