Alright, 1.8 was a massive change for all of us. And for most it was good. But for some, understandably, it took away a lot. Minecraft changed, and change always leaves people on the heads and tails of things. Literally and metaphorically.
I'm not complaining about any of the changes, but it's a bit sad to know that the only way to play 1.7.3 in it's glory is to downgrade, which leaves other features to be desired. Why can't we have some customizable options that let's us play the old Minecraft?
The following should be togglable.
Food/Hunger:Returns to the old heart system. All food non stackable except for cookies. No hunger. You can only sprint for 30 seconds every minute, if enabled. Giant mushrooms do not drop smaller ones. Rotten flesh heals 1/2 a heart.
Sprinting/Critical hits:Removes sprinting and critical hits.
Mob spawns:Mob do not stay for long, but respawn quickly. Cows do not drop beef and chickens do not drop meat.
Experience/enchanting:Can be disabled and enabled.
Potions:Can be disabled or enabled.
Map generation:Return to the classic map styles.
You could be like "JUST DON'T USE THOSE THINGS!". But some of the things, like hunger, are just there, you can't ignore it. You just want the old Minecraft sometimes, which hunger prohibits occasionally. Potions and enchanting are primarily optional, but still, what if you just want the basics? This is hurting the user more anyway, even in the case of hunger, which can make the game extremely easy or annoying at times.
That's all that really needs to be said. Keep in mind that this isn't really tedious work, unless the old map gen was completely removed and would thus require cramming to fir back in. Everything else is just a simple fix.
Yes I would like to be able to turn off the Hunger Bar but I think food should still stack, also just indefinite sprinting or a stamina bar, that is only affected by sprinting, to replace it.
I would like an option to turn of weather like Optifine has.

I can understand the annoyance of enchanting (because I don't want Minecraft going too deep into stereotype magic, unconventional stuff like redstone is OK though) and hunger to a point, but really sprinting doesn't seem to hurt the feel of the game, for me at least. Critical hits are meh, if they were disabled and bows still required charging up then bows would be utterly terrible. And why wouldn't giant mushrooms drop smaller ones?

Critical hits actually have a 100% chance to happen if you hit a monster while falling or if you fully charge a bow. The reason fully charged bows do such high damage is BECAUSE THEY DO CRITICAL HITS. So with disabled crits, would the bow basically become a machine-gun again? (like it was before 1.8?)
Mushrooms would make for too easy of a food source if hunger and stackable food was removed. Get two mushrooms, some bowls and some bonemeal and you're set for a long time.
We can already have infinite wood with some bonemeal and at least one sapling, and the easy infinite food thing is already covered by fishing and wheat growing. Mushrooms don't make it any worse. Mushroom growing is actually slightly harder because they require so much room to grow and are harder to initially come by than seeds or water.

With critical hits you're always just jumping for hits though. And it seems like sometimes they don't show up. For the bow, it can still be chargeable and be a two hit kill if charged, if not then tune it up so it can.
For mushrooms the thing is that they DO heal a lot if hearts are back and it just feels a lot better to have a huge mushroom farm. They can drop a few when bonemealed, just not too much.

Like I said before, the reason bows currently do such high damage is because a fully charged shot counts as a critical hit, and therefore if criticals were disabled then that would be impossible without recoding it a little.
