Enderdragon (drops, besides experience orbs and possibly ores/ingots)...
Dragon scale/hide
- This could have an animation similar to that of enchanted items; and can be crafted into armor. The armor would enhance ranged attack capabilities, at the cost of providing not as much protection comparable to metal armors (maybe offering the same protection as leather). It could also perhaps have some magical properties, like a small chance to deflect projectiles from, say, a ghast or skeleton (the chances of this happening could be increased through enchantment, and perhaps each successful deflection would lower the armor's durability). Scales could also be used for potions (invisibility? I know that was a planned recipe).
EDIT: This could also open potential for new ranged equipment in general; really, why be limited to swords, armor and fists alone? Or why would you (logically) use a bow with heavy plated armor (well, that's my opinion...). Still, the beauty of minecraft is in its simplicity; perhaps just adding crossbows? I think it could be interesting to choose the path of ranged or melee with greater dynamics.
Dragon bones
- Bones of the dragon would of course be very large compared to their skeletal counterpart, and be crafted into primitive tools that would have extremely high (or even infinite) durability (while not being as effective as, say, diamond). Or perhaps these primitive tools could host special uses for various circumstances (gaining access to specific items, areas, etc.) and/or be crushed into bone meal (which could be more effective than its predecessor, or be just as effective and host another use altogether).
EDIT: Balancing for the infinite (or extremely high) durability of primitive tools could be executed in such a way as making them easy to lose or difficult to use; i.e. cannot be retrieved following death, or cannot be used on certain blocks, etc. (really, i'm just thinking out loud, here).
These ideas assume that the dragon itself is a substantial opponent. Perhaps, if you were to look at (or attack) the dragon, it would display a large health bar to confirm it as boss-like? Maybe being an enderdragon, instead of fire, it could exhale black/purple particles that cause blindness or weakness; after which, it would proceed to "consume" you? (As you are being "chewed", the point of view zooms out so you can actually see the dragon chewing you; it would cause a set amount of damage, and then return to your point of view as you are "spat" out, the effects of blindness/weakness having also worn off.)
Leather and diamond armour have the same protection. Just different durability.

To make up for Dragon item's high potency, just have them drop 0-1 items when they die, so you will have to hunt a lot of dragons to get enough dragon scales for full armor. It would make a good replacement for diamond armor. Making armor out of diamond never made much sense to me.
Well, dragon scale is supposed to (in fantasy) be harder than diamond and completely resistant to fire. Dragon bones can hold magic extremely well, as can the scales.
To make up for Dragon item's high potency, just have them drop 0-1 items when they die, so you will have to hunt a lot of dragons to get enough dragon scales for full armor. It would make a good replacement for diamond armor. Making armor out of diamond never made much sense to me.
That would actually be quite effective, assuming the dragons are difficult to kill; I really do like the idea of dragon scale armor replacing diamond armor in the upper tier. If you consider the effort it takes to even reach the ender realm (find diamond, mine obsidian, go to Nether, create brewing stand, make ender eye, find stronghold, fix portal, enter...), it really would make sense (in my eyes, at least).

I think that, with the difficulty required in hunting dragons (since they're supposed to be /very/ rare), if the dragon scale armor made you completely resistant to fire and never wore down it would still be fair. Of course, you could still die while wearing it and lose it all
Well, Jeb has been looking for ways that make sense to create tools stronger than diamond. I think that a dragon scale armor set would actually make a lot of sense. Say they drop 1-5 scales on death, depending on how hard they are to kill, it would be perfect for obtaining tools or armor that are greater than diamond. The bones are another great idea, but what about, instead of making tools (Blaze rods'd make more sense for tools.) the bones could create, say, 10 bonemeal? (If they are as Common in the Ender as Ghasts are in the Nether, then this'd be a good amount and use.) Perhaps they could do wooden sword damage due to their size?
