Right, so I noticed most of the mobs on the overworld are not really based on tanking, but rather ambushing the player (Creepers, Spiders, Endermen), which is totally fine-this gives the game a lot of tension since you can get jumped on pretty easily. However, I feel like a different kind of mob wouldn't hurt, so I'll try to share my idea of one that is meant to take hits/be avoided in general.
Gargoyles
Basic Concept
The Gargoyle is a flying mob that has no health-it just takes infinite hits. When exposed to sunlight, the gargoyle turns into a "gargoyle block", which can be mined to prevent it from turning into a gargoyle when it's sunlight is blocked or night falls.
Spawning
Gargoyles should be pretty rare, considering the way they work. Maybe every chunk of overworld should have a 1/14 chance of having a Gargoyle Block/Gargoyle on it. Note that Gargoyle blocks should spawn on solid land, but should not spawn underground.
They can also very, very rarely spawn at night, at high elevations. You might see one ot two every Minecraft week.
Mob Mechanics
When not around the player, Gargoyles generally do 2 things. Fly around and roost. Flying works like how other mobs walk around, only in the air. Gargoyles will occasionally roost on higher up blocks on occasion, or when the sun is starting to come up.
When a Gargoyle encounters the player from a far distance, it will swoop down and attempt to pick the player up. When the player hits a Gargoyle or when the Gargoyle reaches a great height, the Gargoyle will let go of the player, and they will fall to the ground. This means that Gargoyles use fall damage for their main attack, but also note that it is pretty easy to get out of their grip.
If the Gargoyle encounters the player at close range, it will just try to ram into the player. They can be kept away by attacking them, as hitting them enough will cause them to get tired of going after the player, despite being invincible.
The Gargoyle's attacks are not meant to do too much damage, since it already has both flying and invincibility attributes working for it.
Block Mechanics
When exposed to sunlight, the mob becomes a 2-high block with physics similar to sand/gravel (This allows it to turn into a block if it was turned to stone in the air without making it float).
If kept in a high light source while night falls, it will still stay as a block. A freed gargoyle won't turn into a block any time during the night, though.
It can be mined with any pick, but takes a while to mine (It's close to redstone in mining time). It has pretty high blast resistance as well.
Block Uses
Aside from not being a living Gargoyle that wants to kill you, a Gargoyle block can be turned into an amount of cobble/smooth stone/stone brick.
I'm not entirely sure though, but I do know that whatever the block can be crafted into should be useful, since blocks are technically a Gargoyle's "drop".
Other Ideas
One idea I had from this mob is that it can also pickup creepers and ram into you while holding the creeper. The creeper can explode when it's close to you, and since the Gargoyle doesn't take damage, t can use this as an attack without damaging itself.
I also thought of the idea of being able to craft a knife out of a stick and gargoyle block, and said knife can actually damage and kill Gargoyles. The problem with this is that it gets rid of the whole "Invincible" idea, but it allows a Gargoyle to have drops other than just one Gargoyle Block.
That sounds like a great mod. just the thought of it is terrifying
I'm just worried it's overpowered.
That's why it's main attack of dropping you can be easily countered, it has poor offensive abilities. And of course, it leaves you alone if you hit it enough.
... That's kind of weird on reflection, since it's a mob that starts aggressive, but turns neutral if you attack it enough.

Will yes but maybe a item that scares it off? but that item only works for about 3 uses then you need to make the item agian
like a sun mirror. it harnesses that suns power for 3 uses and it fly's away in terror of being turned into stone. giving you time to run away 3 times.
I like the concept of this, but truthfully, I think you should have a higher spawn amount.
Make it appear maybe a little more often, since it's pretty easy to counter.
If you make it appear more often, then the knife would have a much more practical meaning besides just being there, shoved in the lowest parts of your inventory.

I originally thought it's spawn count should be low, because a flying mob alone would change Minecraft's feel. And invincible flying one, of course would change the feeling even more.
But you are right, they are pretty easy to fight off, since they can easily be countered. They're only a real problem when paired with other mobs, since their grab will make you unable to maneuver properly.
The knife was sort of an extra idea I had, but I'm not sure about it. It kills their concept a bit, but now that you bring up the point about inventory space, the knife feels like even more of a waste to me now.

You don't need items to scare it off.
Just punch it in the nose a few times, then it'll cry and fly to a corner of the clouds.
Well, not exactly like that, but you know what I mean.
