Gargoyles, big statues that sit in the middle of a tall, lit up room in a Stronghold, motionless. Doesn't seem that intimidating does it? But when you go and try it hit it, you don't seem to do any damage. You remove all the torches in the room, and it turns pitch black. Suddenly, the Gargoyle's eyes turn red, and it begins to move. IT'S ALIVE!
My suggestion, being Gargoyles. If there is light, from level 5 or higher, the Gargoyle will not move, and no damage will be able to be done to it. But once the light level hits 4 or below, the Gargoyle comes to life and begins to attack the player. Now you may be thinking, "But then how am I supposed to fight it?" Well as I said, when alive, it's eyes turn red so you should be able to identify where it is. It could also have wings, allowing it to fly up to 5 to 10 blocks? Additionally, once spawned, they never despawn? Making it easier to use them in maps.
They would have 15 hearts, which is 30 hit points. And they would do about 3 1/2 hearts of damage. And again, they would only be found normally in Strongholds. What would they drop? Maybe they could drop a place-able version of themselves. Along with some stone tools? (Seeing as they are made out of stone). Maybe they could drop a potion that makes you invincible fore a few seconds-minutes?
Optional Additions:
Maybe the Place-able version of itself could attack any other mob that is in the area at night. So say you decide to bring it with you on a nightly trip, and get attacks by some Skeletons. You place the gargoyle down and then right click it, it then begins to attack all the nearby mobs. Once activated however, it cannot be re-obtained. So it's a one time thing. But if you choose to just use it as decoration, then don't right click it. And it would only be activate-able at night.
Seems like a pretty solid idea, but the items that it drops doesn't give you a reason to fight it. If the mini place-able did something that is a different story.

Well I couldn't really think of anything for it to drop yet, I'm thinking maybe one of the new items that are going to come out in later updates. Or maybe it could just give a large amount of skill points. Who knows.
