As the title says, why not let items and water flow through the iron bars? If you all agree, toss this idea at Jeb and Notch. God knows I've tried, but to no response.

Where do you draw the line? Water flows through dirt, gravel and sand. Also, think of all those piston contraptions that only use the extended piston to block water flow, not a pushed block?

I think you've missed the point here. This isn't for realism, it's because having a block that can let water but not monsters through would be useful. We can rather easily "draw the line" at new blocks that have the feature.
