I find that having you able to kill Endermen with normal convenient weapons (Swords, bows, flint and steel, tools, flowers) really making him to easy to kill. He should be invincible to swords and bows even sunlight. But I do think swords and bows and sunlight should still have an effect on him, for example, you beat him with your sword/bow/expose him to sunlight until his health is about half a heart, at that time he should teleport away, or disappear, he should not be completely removed or killed. Once he's hidden or disappeared or what ever, he should wait until the next night, or when you're sleeping, to come back and haunt you. So you can only fend him off initially with conventional weapons. Of course water should say a deadly weapon, I also think the same should goe with TNT considering it's not easy to make. He'd also be harder if he could not catch fire from flint and steel, maybe fire altogether. Endermen should be nearly immortal, or at least seem immortal. I'm not exactly sure how this would apply to mobs. You could make mobs completely avoid him, and even run away when he attacks them thus making Endermen practical gods. SO - Conventional weapons give you more time to find water, lava, lure into trap, rather than actually harm him, then people would actually try harder to not look at him, due to his incredible awesomeness.
So there is my idea, I hope you give some consideration into my input.
Endermen are usually in groups, and pissing off one pisses off his homies, and they are pretty hard to kill with stone or wood weapons (As they have ten hearts)
They also deal out almost four hearts of damage for one strike. Two endermen on your hide is not wise. They are much smarter than other mobs. If you are standing there waiting for them to come within range of your sword they will spawn behind you.
So Endermen are pretty tough as is.

They also deal out almost four hearts of damage for one strike. Two endermen on your hide is not wise. They are much smarter than other mobs. If you are standing there waiting for them to come within range of your sword they will spawn behind you.

From experience, I've never encountered Endermen 'homies' helping out their 'homie' when it's attacked. And it isn't that hard to acquire iron. Stone swords can be just as deadly as iron if you do critical hits, which is easy to do with a tiny amount of practice, I've done it many times. With my suggestions, fending them off with a sword will still have an effect, maybe not killing them but rather give you more time to find water/lava or set up a trap. With sunlight I should have stated that in my opinion they should only reappear if you aggravate them, if not they should be simply removed. My suggestions don't make the Endermen any tougher than before, no extra health or damage, just simply more intelligence. This virtual invulnerability and the ability to out smart the player would serve to make the Enderman a much more scary mob, rather than another mob that you should watch out for cause it can kill you. The Endermen would stand out and be feared. When I heard news about the Enderman mob, I thought he'd be much harder to kill, and that normal weapons would be useless, it's disappointing and not so challenging that he's so easy to kill.
