So the villagers are fairly new and I would assume that there might not be any new additions made to them but here are just a few of the things I thought could be made to them:
*If zombie touches one of the villagers, then they become a zombie. Then the zombified villager will come after you. Either could have just a green rotting skin for the villager model or they just turn into a normal zombie.
*If a hostile mob is near the villager, then they will start running around as if scared. They might run into a house (if that's possible).
*You can give a villager an item which will appear on them, however only certain items (not all). For example, if you give them (right-click) any type of piece of armor like a gold helmet, it will appear atop of their head.
**Additionally if you give a villager a sword, you can recruit them to follow and fight for you, much like a wolf. However unlike a wolf they're health could be much less. You can tell them to halt and move. To indicate how much health they have, they could start to appear pale and much paler once they're at the last bit of health. Their health will increase with each piece of armor you give them. To heal them, simply give them any sort of food
*You could be able to torture them if you're that evil. With tinder (:Flint and Steel:) you can set a villager on fire and watch them run around till they die or dump a bucket of water on them. If you use shears on them, you cut off they nose or a limb and watch as blood starts spraying from them.
*When confronting a villager, they could possibly saying. Pre-recorded voice clips could be included for them to say. Probably lines like "Hello", "How are you?", "Morning" etc. If you attack them, they could start screaming.
Eventually I would assume in a future update that villagers might be given certain animations to look like they're performing some sort of action. Like with the librarian, you might see them walk up to a bookcase block and then a book will appear in their hand. Then after a few minutes they'll walk back to the book case and the book will disappear. With a blacksmith, you might see them holding a pickaxe and they're moving it as if they're mining something, but in reality nothing is happening.
Also with priest villagers, if you're low on health and you're close to one, then they could heal your health and cure you if you're poisoned.
While I hate to be negitive, i highly doubt that they will take the time to add small detail. Like animations and stuff. But I think your ideas look AWSOME! Recruiting villagers to go kill some endermen or creepers im in!

Dismembering them doesn't sound very minecrafty, but I agree with the rest above. (Including the fire.) I would like to add that I think they should also add a guard tower of sorts and town guards with armor and swords or bows and arrows to defend the villagers if they're under attack! Maybe even put a jell cell with iron bars and an iron door in the guards tower.
