I like the concept of Endermen altering the landscape, but I dislike finding eroded landscapes everywhere I go. So I think this ability needs to be changed, as Notch himself has said he'll do. But there's a serious entertainment factor in Endermen's messing with the stuff I build.
I propose that Endermen should only target certain kinds of placed blocks - cobblestone and planks - making them threats to artificial structures but not natural ones. I don't have any objection to their altering trees, though.
It would also be nice if they 'dropped' their blocks when killed, although this wouldn't be so desirable when they fall in lava.

Really though, about 90% of all complaints about the Endermen is because they move player-placed blocks. Even Notch has said it was a poorly thought out idea. I don't think many people will support their being remade as "Griefermen".

If they're holding a block when they die they should automatically place it down where they died so if they take a block form say, your iron block house, then if they die from sunlight, or you then it should be placed down so you dont lose it.

I generally like this idea - but what happens when the Enderman wanders into lava while carrying a block? Where is the block placed? (I don't want my lava resources being ruined.)

Right now, where their movements are random and they select blocks without concern for whether they are naturally or player-placed, they are causing a lot of irritation and annoyance. If they were restricted to only moving player-placed blocks, people would be livid as teams of Endermen tore apart their buildings.
