Even though I'm assuming the giant mushrooms are not complete, I think that you should be able to use them as trees. The mushroom stalk should be able to be gathered with the axe speeding up cutting. The should the top of the mushroom should also be able to be acquired with shears, but with the same texture on all sides.
Instead of adding the random and senseless "mushroom planks" "mushroom crafting table" "mushroom sticks" "mushroom tools" etc. You should be able to cook the stalk pieces in a furnace, which gives a darker stalk block, which functions the like a wooden plank, so it could be able to be crafted into normal sticks, crafting table, and maybe bed (if sheep spawn in the mushroom biome), but nothing else, as not much else would make sense to be made of mushrooms without having to make new textures for all of them.
This would allow you to have what is needed to survive in a mushroom biome without having to bring in a bunch of logs or saplings. And it does this without adding an unnecessary amount of new blocks that aren't much different from blocks already in the game. This would only add 1 block, the cooked stalk block, and fixes to the mushroom cap and stalk blocks already in the game.
how about mushroom stalk piece is crafted directly into wooden planks
I was thinking about that, but it didn't really make sense, since mushroom stalks are much softer than wood, that could still work though, it would simplify things.
