I have an idea... What if, instead of having your gold sit around and taking up chest space, you can make coins which act as currency in single (and multiplayer) worlds!
By putting a gold block in any of the the crafting squares, you form (x) amount of gold coins! Instead of trading, you can simply buy from an NPC called a "Merchant" who will bring a menu when interacted with something similar to the main menu. From there, you can buy a variety of items depending on your level. You may also sell items that you have extreme surplus of (Blocks excluded)
Lower levels should only be able to buy basic items (Ie, coal, wooden items, leather armor, bread / wheat, apples). Once you reach a certain level, new items are available for purchase. (Not sure what the difficulty curve on the level system is going to be so can't estimate the level requirement for later items).
For extremely high levels, rare items that can usually only be found through chests (Ie. Cocoa beans, saddles, Blocks that are difficult to obtain (Bookshelves, TNT, Brick etc...)and even diamond tools/ weapons/ Armor should be available for purchase (For a really high price, of course.)
I also think there should be quests. Random NPCs will give you tasks that are rewarded in exp and/or gold and/or Items.
"I need 20 porkchops for a feast I'm holding, could you please be as kind as to hunt pigs for me?"
Reward: 30 Gold Coins
"I need to start my garden all over again, could you please bring me an Iron Hoe?"
Reward: 10 Gold Coins, 50 Exp
"If you can bring me a full set of Gold Armor, as well as a Gold sword, I'll reward you like a king!"
Reward: 100 Gold Coins, 100 Exp, Golden Apple

EDIT: There should also be a craftable item which is a wallet that stores gold coins like an inventory would... only inside your inventory... Inventoryception, basically. The purpose for it is to avoid inventory clutter from stacks and stacks of gold coins.
I don't mind a possible currency system, with the addition of NPCs soon, however I don't think it should be with gold since you can mine gold. I don't think the currency should be a collectible resource.

Good idea though, although it seems if you want this kind of thing there are plenty of other games that provide it...
Not many people make gold picks because it's power is equal to that of a wooden one... And most games have it because it's simple yet effective and fits this genre of MC almost perfectly.
That's one out of the two sensible reasons I can think of that gold is important (The other being use for decoration) but don't you kind of want something more?

Well, this being a game revolved around crafting and mining, I think it only make sense that you can craft Coins from gold. Especially since it's not rare but not common at the same time.
Currency is not meant to be just found like that. If you look at the real world you'll find that we can trade resources and services for a neutral currency. This is possible because the worth of money is somewhat stable because:
-Humans have a set of rules regarding the making of extra money, whereas Minecraft can simply render a new set of chunks with more gold/currency.
-The world is much bigger, which makes the effect of finding/making new money not that big a deal. It wouldn't affect THAT much, but in a minecraft server with, say, 30 players, finding a vein of gold ores would be a huge shift in power.
A vein of Gold would be extremely rare. And just like in real life, is possible.
We have a few "useful" uses for gold: Clocks, powered rail, pretty looking armor for social server events.
We just need more "useful" uses.
But I would like a game-based bank (not people-run) where for example you could trade gold for diamonds (I go through diamond pickaxes as if they were candy).
