So, you should be able to turn cobblestone into mossycobblestone using the vines in game. It has a 1/10 chance of happening to a cobblestone block, and stone can be turned into cobblestone. (Think of the vine wrapping around the stone, and going through it)
So for "Stone to mossy cobblestone" would be:
1/10 chance of turning to cobblestone
1/10 chance of turning to mossy cobblestone
so a 1/100 chance of turning stone to mossy cobblestone.
However there is a 1/10 chance of turning cobblestone to mossy cobblestone since it is already broken. By chances I mean, when a vine grows on a stone/cobblestone block it has a 1/10 chance of turning it into the block listed above. (However breaking a stone block will turn it to cobblestone either way)
I think it would add some cool things to buildings in Minecraft. Mabye give some of them an older feel, and easier to make too since the user doesn't have to find mossy cobblestone in dungeons (which sucks, because if you find 4 dungeons you have enough to build a modest shed).

That, is a brilliant idea, I like it! Perhaps it could be based on the amount of time that the vine has been there, even. Say, leave a vine on a cobble block for a certain number of ingame days, and the vine grows into the block?
Like the guy above said, vines and moss are totally different, but it could still make for an interesting mod.

and well, currently there is no moss in minecraft.
Vines are the closest thing we have :L
Another alternative idea is to be able to bake mossy cobble, to yield slime balls.
Slimeball + cobble = mossy cobble.
So now you can either get slimeballs if you find a dungeon but not the elusive slime, or make mossy if you happen to find slimes but are dungeon deficient.
