I think game difficulty should only be selected when you start a new world, and then you cannot change the difficulty for that world. People can just start in peaceful, build a safe base, and then change the difficulty. Or they can change the difficulty from hard to peaceful and all badies are dead.
The only reason I might/would support this is because I'd like that kind of commitment to difficulty, but I can always just choose not to change it. Why remove gameplay options for others just because you think the game should be played a certain way?
I see no reason to take out a feature that allows customization of game play.
I like to play on Hard above ground, but when I go below I play on Peaceful. Because I am looking for different things at different times.
Or when I want to play on Peaceful-- but need hostiles for their drops. Then I get to turn to a harder difficulty to grab those things (or fuel a mob trap). Then back when I want to play again.
And don't say that I can use Creative. Peaceful Survival is a lot different than Creative. I don't play Minecraft to fight, nor to build. I play it for the search and collection aspects that spelunking gives me. I want to build things, but I don't want all my materials given to me (no Creative) and I don't want monsters in my way(no difficulty), but I want to make TNT, and have a bow and arrows, and use bonemeal... So I need monsters sometimes.
If you don't want to change in game then don't. I do, so I will.

Honestly I'd prefer it if people could play the game they want it to be played. I myself go into some moods of more intense gameplay(difficulty: hard while mining) or more casual gameplay(peaceful/easy while building and such)
Take ekobar there, for example. He explained that that's the way he likes to play the game. Did he suggest that mobs be permanently disabled when underground? No. He just mentioned that he likes to go mining without being sabotaged, and that's just fine. It doesn't affect anyone but him.

This is not really a gameplay option. It is an option to screw the gameplay.
