I know java is not a multi-core language and was made before multi-treading came out but iv been hearing it is possible to program certain things to work on other threads inside a program of java. Im not to sure how long that would take of if its even worth doing it. I just want to know what a Developer of Mojang thinks of this.

Although multi-threading is an issue, its not that big of a deal. Most current CPU's can handle Minecraft on a single core. The biggest problem is the unoptimized code and RAM utilization. But I think this will be fixed when Mojang optimises its code for the full release.
