I love Minecraft and had my own server for a while, but quickly got bored because all there really is to do is build and mine for more building materials.
I would play this game forever if there was something to drive the gameplay, and I dont mean a story mode or anything like that.
Here are some of my idea, keeping multiplayer survival mode in mind (and some of these ideas are not new)
Stores: Allow admins (or certain players) to place special chests that act like shops, where you can set maybe 10 items and thier costs up, allowing for each item to have a unique cost set by the shop owner.
Staking Claims: A special option for the admins to set, if turned on, each player will have a special power. by pressing a certain key they can stake their claim on the land right where they stand. This will set a zone in which is "owned" by the claim holder. When this option is in effect, the world acts as it normally does inside the claim, but outside the claim all blocks placed by the player deteriorate after a few day cycles. Any blocks removed from the world regrow after double this amount of day cycles. When a player stakes a new claim, the previous claim zone is gone and that area starts to revert. Or maybe just wood and glass deteriorate so it can leave like stone ruins? The whole idea is so that the world doesnt get too ugly for long term gamers. Maybe some asshole comes in and makes a bunch of ugly **** and gets banned, well this would wipe it away. Oh and maybe special mini-stakes can be bought at a store (See last idea of stores) or awarded by admins or made from expensive materials so that things you make in other parts of the world dont dissapear just because your zone isnt big enough. These could have durations perhaps.

If you implement stores, you should be able to turn gold into coins i suppose.
Add roaming monsters that require more than a few seconds to kill. but are more rare.
Messenger: Add NPC's that come find you once in a while telling you of a monster coming and from what direction, or maybe another location that needs clearing of monsters.
Let dogs also work as guard dogs, and have them lookout for people stealing from chests placed by thier masters, dogs will attack if master isnt around, if master is around they will bark alerts if there is stealing. limited sight range of course, but would be cool if they wandered around staying near the masters placed blocks.
Just ideas, I hade more better ones but I cant think of them right now.

the plugins are not easy for everyone to use, and break everytime there is an update and dont work perfectly.
