Here's my idea: If there was some way to distinguish "ocean" water from "fresh" water, then you could get a bucket of saltwater from the ocean (lake/river water would be normal). Saltwater acts exactly like normal water when you place it, but putting it in a furnace will leave a bucket of salt. This salt could, say, add a hunger point or two to any cooked meat.
I guess this could be added with steam-powered equipment, too (boiled water giving off steam).

Would there be any difference in the way saltwater moves/looks?
No, it would look the same. But you would know the difference by where you find the water. Water from an ocean would be saltwater, from a lake/river would be normal water.

It would be hard to distinguish which water source is a river or ocean though. Wouldn't they conflict?
Well, with the addition of the swamp biome, Notch has proven that it's feasible to make different coding for water (even if it's just a different color), so I don't think they would conflict at all.

Also, you could throw salt on your wounds to help them heal faster, which in turn will give a temporary HP regen rate boost.
