The adventure aspect of this game is coming together quite nicely, although I feel like leaving your house (without decent armor) at night is still far too tempting, I know notch remembers the old adventure games we used to play long ago, when you ventured at night or too early on you knew your virtual life was at great risk.

I propose a few new mobs even though I'm sure Mojang is already planning more, suggestions are open.
My first mob proposal is the "Ant Lion", the mob should stay burrowed under ground, unearthing only because someone/thing wandered too close, perhaps it can trap player characters some way, I haven't looked at the MC code I don't know if this (trapping) is even possible. (my knowledge of the existing mechanics says it is)
The Ant Lion should be feared, no falling in his pit taking 2 hearts damage per second, if you fall in you should be lucky to survive basically.
Th Ant Lion's attack range should be vertical, maybe slightly horizontal either way I feel like if you dig under one, or horizontally toward one it should be pretty well screwed as is tradition irl.
Perhaps a nocturnal hunter?
Prevalent in desert biomes, deserts do not yet inspire interaction and frankly they are an easy way to survive, you can spot mobs a mile away.
Extremely vulnerable to fire/heat?
Ability to grab/drag player characters or perhaps a movement penalty similar to cobwebs when too close to it's trap/home.
This is a great game, I feel the endermen were a step in the right direction, still leaving my house at night with no armor and a wooden sword is still a walk in the park, I see many obsess over "the first night" in a new map and having to build shelter to survive said night.
I don't feel the same, with difficulty on hard I still feel as though if I didn't manage to build shelter before nightfall I'll manage anyway.
I see what you are saying man i too hit a certain point in the game and then it basically losing difficulty... 1.8 has made it take longer (with the being forced to eat food thing) but it is easily survivable one proper precautions have been made...

i wish there were more challenging mobs, cuz honestly i usualy just sit in a tree on the first night looking for some skeles so i can make a farm in the morning, fighting them with a wooden sword and winning everytime, too eaisly. Maybe silverfish could spawn regularly and eat a wooden sword or tool if it was hit with one?
