I've always been dissatisfied with the idea of starting out by immediately punching the closest tree. I know that not everything in minecraft is realistic, but realism or not, I think things need to be as intuitive as possible within the assumptions of any particular game world. And the assumption of the minecraft world is that most resources, especially those made out of harder materials, need advanced tools to harvest, and wood is certainly a hard material, no?
On the other hand, tree-punching has become an iconic part of minecraft, so I understand people who would object to removing it from the game entirely.
The solution I've come up with is a level upgrade called "Fists of Steel" that allows your character to harvest wood with only your fists.
In addition, I'd still like to add the "flint hatchet" item (made out of flint and either bones or reeds) as an alternative way to gather wood at the start of the game.
So, starting a new game, you'd have two options: you could kill animals until you gained enough experience to get the "Fists of Steel" upgrade, or you could find gravel and either bones or reeds and make a flint hatchet.

The one serious problem with this idea is the scarcity of easy to acquire gravel in most biomes, and finding sugar cane can be quite an adventure in itself if you get unlucky with spawn location. Bones are right out since if reeds weren't nearby you would have zero tools and would need to survive a night intentionally punching skeletons to death. If this idea were to be put in place (no breaking trees by punching), a bevy of tools and options would need to be added to let people survive in various areas (like sandstone tools in addition to flint tools, or maybe mobs also drop bones). Even with sandstone tools and flint tools, though, that's still a pretty difficult thing to overcome on the first night...and having to harvest sand and gravel to make an axe blade would be less intuitive than just punching a tree.
But, if there was a way to get around the blade resource problem, trees could also be made to have branches instead of only using leaves and trunk blocks; the branches could be broken by punching and processed directly into sticks (they could also 'decay' like leaf branches when there's no trunk). This way, wood blocks would be a tech increase of sorts. It would also eliminate the need for wooden tools, which always seemed goofy to me at best.
Yeah, I'd also support saplings being convertible into sticks, which you could then use with flint to make a flint hatchet that way.
And gravel is NOT hard to find on the first day. The only place I can think of where gravel might be hard to find would be in an ocean biome on a small island...but then you have bigger problems to worry about (especially if there are no trees in the first place).
