first off, i love rocks "geology" (in real life) and i also enjoy minecraft. the game is simply unrealistic in the way the ores are dispersed. now i know people will say the entire premiss of my argument is unjust because minecraft itself is not realistic but i do believe it would add character to the game.
to make this work i propose a combination of the existing pockets and an occasional vein, the latter being more rare. the veins would consist of disseminated quartz and minerals, make no mistake it wouldn't be solid minerals but every few blocks of quartz would give way to an ore. every once in a while, there would be larger pockets than the average width of the vein which is also realistic and would add intrigue because they would contain significantly more amounts of ore. also realistic, the veins would trend in an average direction and would no be perfectly straight.

but i'm not happy with'em now
i want them to sparkle and shine
when i'm full with steel, i become lazy and ignore them.
but if they shine and sparkle, i'd getem
