I saw a video about alchemy, as im sure plenty of people have since it was reviewed by Yogscast. But that mod showed how practical alchemy can be! Granted that some of the elements were overpowered, there were still many useful ones, like health potions!
Now with alchemy you will always have to go out and hunt for the materials you need, natural ingredients like mushrooms and plants, crushed with a mortar and pestle, and then combined. This will now give you another reason to go out and explore the world, some elements will be easy to find out in the open world, while others will be more difficult to find, like in deep mines or dungeons.
Over all it will expand the game play, people will be more willing to explore the world generated before them to make more exotic potions. At the moment the only thing somebody would need to venture out into the unknown would be to find a dungeon, and find some rare items, granted that that is already allot of fun to do, but for those who are not dwarves, they can just venture out into the forests and gather herbs to make better potions.

I also agree that the alchemy mod the Yogscast did the video for showed how useful it could be. I can see how alchemy would be useful especialy with the Adventure update. It would add a new level of gameplay that would just make the game more imersive and enjoyable.

Exactly, at the moment there isn't much in adventure. The 1.8 will add more things that will add more things to do, NPC villages and the new dungeons. But still adding alchemy will still give you more to choose from. Not only that, but some would like the idea of foraging above ground, than diggy diggy hole. :3
