I'm not here to suggest any specific biome. I'll enjoy exploring anything new because exploring is my favorite part of minecraft. I just think that some future biomes should be made with exploration in mind. Let me explain myself.
The thing I remember most about when I first started playing minecraft was my first deep cave/mineshaft. I kept expecting to find the end of the cave but instead it just branched ever outward and downward. Eventually I realized that this was something that I could get lost in. The deeper I got the more dangerous it seemed to become and the more endless the cave felt. And the best part was that I had a reason for exploring these depths; I was not just wandering aimlessly. There were diamonds and gold and all manner of useful things.
I'm sure that almost everyone who has played minecraft has had a similar experience. Unfortunately after you have mined your way through 3 or 4 of these huge caves the experience loses some of of it's awesomeness, and certainly after 9 or 10 it almost becomes boring. That is why I think that some biomes should mimic this experience offered by mining. For example if there were say, a jungle biome, hacking your way through the dense foliage should be just as treacherous/rewarding as mining around pools of lava searching for diamonds. If this were the case the surface of minecraft could become more than just a canvas for creation (which I believe is currently it's primary function), it would be a place for exploration offering alternatives to the awesome albeit repetitive mining.

well put, most exploration in video games needs a tangible goal. Right now the only real goal in the overworld is to find pumpkins, reeds or cool land features. That's why there needs to be some kind of... thing to find and some kind of... thing to get out of doing it.
