The whole point of saddles are to add more of a reward to dungeons. For example, there are tons of things you can only get from dungeons. Why not make mossy cobblestone* craftable or at least easy to get? Because it's meant to be harder to get. Sometimes, I actually think they're making the game TOO easy. We've asked for a load of crap to make the game a lot easier. Anyways, Saddles are the whole reason of an achievement. Should saddles be craftable, then people get away with earning that achievement the easy way. As if it isn't easy enough, for that matter.

Now if you could control the pigs with saddles and they could jump and run faster, then I would want it to be a dungeon drop, as it becomes a very useful item. But in it's currently pointless state, why not make them craftable.

Cocoa makes Cookies, which being a food item, affects gameplay.
Gold may only be good for a few things, but those things affect gameplay One allows you to know what time it is deep underground and the other allows for fast transportation via Minecarts.
Saddle is only for an achievement, and the achievements in NO way affect gameplay.
