Hi, first of all sorry if there's a similiar suggestion already. Did some search and didn't find one so here goes:
I had an idea of a new mob that I felt was vivid. What makes this mob interesting is it's way of manipulating the world around it. The new mob is essentially a sort of a insect like "hive mind" specie. Where dozens (or even hundreds) of individual mobs work together for a common goal. Here's the catch, "The Hive" mob could be an insect like (or robotic, zombie, cultist, slime or other extremely communal sorta posse) that would "eat" the entire world block by block! They would carry or eat the blocks around their starting point for their own sinister purposes.
Perhaps they are building a massive geometrical structure that blackens the skies themselves. A temple? A portal? Whatever it is it is up to the player to stop their advance as their numbers and power are growing as the block world is chewed smaller day by day. It would be impossible to destroy the exponentially expanding structure or individual mobs but by destroying the single hive mind entity that is located at the heart of their structure would stop their threathening expansion.
I feel like the mob would be an intersting addition that would be as horrifying (imagine that the world would be litereally eaten block by block by weird creatures, leaving behind barren emptiness) as it would be mystifying (as a colossal geometric structure rises on the horizon). I think this mob would combine AI and world manipulation in an unprecedented way.
In practical terms having such expansionistic neighbours would not be a pleasant thing to wake up for more peaceful oriented players, perhaps their presence would only be present in harder game modes or they presense could be altogether entirely optional, or contruction project could have a maxinum size and after reaching that they would stop consuming the world. Hope you find the idea interesting atleast.
I had an idea of a Plant/Monster similar to this idea in that it would spread.
The plant starts out as a single block randomly located inside a cave.
It would create creeping vine blocks on blocks adjacent to it or other creeping vine blocks. It could only spread to air blocks that are touching solid blocks. So it could go on the floor, walls, and ceiling, but not in open space.
Sometimes instead of a vineblock it would produce a block that can fire projectile barbs.
So it would spread like Mushrooms do but instead of being joyful at finding an infestation you would be fleeing in terror.

I think you should probably be able to set the whole thing on fire, too.
Too bad fire doesn't spread very far. And, I think that the whole thing should begin to decay if the source is destroyed.
