When Notch first explained despawning, he called it "Lonely and starved". Since 1.8 no longer has despawning, it doesn't make sense. An animal in Minecraft can live forever in a small space. I'm suggesting, they can die.
With the addition of hunger in 1.8 animals should have it too. You wouldn't know how hungry it is unless it's moving slower, lowering it's head, or making tons of noise. The animals can eat two things, tall grass, and a hay bale. I'll explain that later.
If an animal's hunger is it's highest possible, it would make noise and fall over in a puff of smoke, dying. This would pretty much be a realistic "despawning" that you could prevent.
Each species of animal have their own amount of hunger and thirst they can withstand (chicken being the lowest, cow being the highest). Baby animals have less than their adult form.
Animals should also need water to live. If they are thirsty they will look for a water block (calm or flowing, either one) and move their head up and down like sheep did to graze in Survival Test. Their thirst will go back up and the water block will disappear, most likely being re-filled by other water blocks. The animal can die of starvation or thirst, whichever comes first. Thirst will most likely be a problem if an animal travels to the desert. Hunger will probably not be a problem due to desert shrubs being tall grass.
All three types of tall grass should spread much slower than grass, but much faster than mushrooms. This makes them farm able and will keep your livestock alive.
A hay bale is a block crafted with 4 wheat in your crafting grid. It's affected by gravity so it's easy to store (sort of like pez dispensers). Another option of making a hay bale would have two pistons crush 4 wheat in one space. If the pistons retract, the wheat disappears in a poof of smoke leaving behind a hay bale. A hay bale provides full healing of hunger to animals, and animals only. Though, a hay bale block can only restore up to 25 full chicken legs before it's destroyed. It would be important to have a storage or automatic dispenser on your farm for hay bales to keep your animals alive.
Animals will die on their own if you don't care for them yourself. It's better than the old despawning, where you cannot prevent it. With enough food and water, you're set to farm.

maybe pigs will prefer mushrooms but will eat tall grass when needed
sheep could prefer tall grass but will eat mushrooms if they have to
dogs could hunt pigs sheep cows and chickens and when the hunted animals die they get hunger refilled
and chickens could break tall grass and eat the seeds.
maybe even you could make all passive mobs pets to, pigs could help you find mushrooms since it would wander in source of them when they are well fed, sheep sugar cane and the regenerate wool
and cows can be milked or killed
and last but not least instead of randomly spawning they could breed like in mo creatures so that animal population doesn't go out of control

Pigs should be able to eat tall grass and mushrooms, since mushrooms are rare. Hmm...maybe pigs can sense mushrooms even far away? You could use a saddled pig to get mushrooms...:smile.gif:

Hmm, you'd need to put a long respawn timer on the animals then, otherwise there would be hides and pork everywhere from wild animals who die from starvation/lack of water.
Animals should breed on their own every few Minecraft days. Sort of like constant mating seasons. :tongue.gif:
