Now npc villages have already been confirmed, but just imagine if you could recruit villagers into an army or a town or castle guard? Listed below are also some other possible uses.
* Town guard- armed civilians who will do their best to protect fellow npc's and the player as well as protect player made structures
* legionaries- men you can send out into the surrounding countryside and charge them with keeping mines secure ( perhaps a system could be worked out were a specially constructed torch could be made to designate places you wish for your legionaries to guard, perhaps the materials used to construct the torch should be exotic and hard to come by)
perhaps also there would be autonomous villages not under the players control that could perhaps attack and make war with other villages as well with the player him/herself.
Also a system were players could in essence craft their own npc's with say a specially crafted equipment chest placed in a designated barracks, players could assign jobs and roles based on the equipment stocked in the chests.

I personally think the game is already too easy, even on Hard. That last thing I need is another companion. My trusty meat shield wolf is enough.
And where exactly did you get the impression that NPC villages are under the player's control?
At first they may not be but in the end all of this is just speculation on what could be and I think its honestly fair to say that there will be a system put in place to influence the npc's just like you can influence your "meat shields".

The game is simply too easy. As for them defending structures, your structures are only in danger if you are near the structures, in the open, with Creepers nearby.
Perhaps you have forgotten the fact that the game is not currently in a finished state, all in all; all aspects of this game are obviously subject to change. The difficulty can always be made more difficult and the addition of warring villages could in fact add a new angle to the game which could open up room for added difficulty. Perhaps the fact that you have obviously played a lot of minecraft suggests that you have experienced all the mechanics it currently has to offer, there is no more hardship for you in the way of game difficulty because you have simply mastered the mechanics provided. with the addition of potentially freindly or non-freindly nps's its obvious that the game would be changed by a significant bit and thus giving more for you to master. And with the undoubted additions of new mobs the difficulty could be changed significantly more.
