Note: I got this idea after reading Regular Hexahedron's thread about morse code signs and deciding it was too complicated and screwed with immersion too much (no offense to Regular Hexahedron) by requiring constant consultation of a morse code wiki. So, here we go:
An iron version of the current sign. But instead of having the player type text onto it, it works via redstone by printing a letter based on the number of times you send a redstone charge. So press a button (or flip a lever on, or step on a pressure plate) 5 times, you'll get E. 3 times, C.
As for numbers, symbols, spaces, and such: Repeaters. A circuit with a repeater set to 1-tick delay would produce numbers instead. Set to 2 ticks could produce symbols (/, @, $, etcetera). Set to 3 ticks would move to the next letter. Set to 4 ticks would move back once (delete). Alternatively, a new item akin to repeaters could be added for this purpose, possibly crafted like a repeater with gold ingots in place of stone.
:Portabella ----- = Would print letters based on their place in the alphabet (so 1 press for A, 2 for B, and so on)
----:RedShroom:[1]---:chestfront: = Would print numbers based on how many times you charge the circuit (1 press for 1, 2 for 2, etc.)
---:RedShroom:[2]---:chestfront: = Would print symbols. Order as follows ! " # $ % & ' ( ) * + , - . / : ; < = > ? @ [ \ ] ^ - ` { | } ~, so 1 press for !, 2 for ", etcetera. Order taken from ASCII, by the way.
---:RedShroom:[3]---:chestfront: = Would move ahead by 1 for each charge (1 press to type the next letter of a word, 2 presses would be a space between words, etc)
---:RedShroom:[4]---:chestfront: = Would move back by 1 for each charge, deleting already-entered text along the way. (1 press to delete one letter, 2 for 2, and so on and so forth)
Hypothetical: You read a thread in the Suggestions forum. You suddenly realize you've seen the idea before. Maybe it's a duplicate? No. Maybe it's just you? No. Maybe it's been done already? Very likely: Click here if there's a mod for that.
Uses (borrowed directly from Hexahedron because I didn't want to type it out again):
You could simply use it to send messages across distances, to multiple signs at once. (If you're playing some sort of wargame, it could function as a telegraph)
Or for more advanced redstone systems, you could create devices capable of automatically displaying different messages depending on what input they receive. Or ones that endlessly cycle through a few different messages.
A few possible ideas to build with this:
A challenge map creator could create a dialogue menu, where pressing buttons to select certain sentences causes different responses to appear on a sign.
A calendar that automatically displays the day of the week.
A sign that endlessly cycles through several different messages, such as a list of server rules.
A minecart tracking system that displays the name of the last railway station a minecart stopped at.
A scoreboard for a spleef arena.
A private telegraph line (obviously) between separate bases.
A bulletin board system, that allows someone in one location to post a message readable in places all over the world.
A music box that displays a song's lyrics as it plays the tune on note blocks.

Changed the title. Now thinking of a crafting recipe...Maybe:
= iron block = redstone dust

Instead of repeaters, add a new item (name to be determined) that looks like a repeater but with a golden base. Functionality remains the same as written in the OP. Crafted like a repeater but with gold ingots instead of stone:
Where = redstone torch and = redstone dust.
