We all know Notch is making NPC villages. He has announced that either Humans or Pigmen will run them. Well, why not both? And even, why stop there? We all love options, and multiple NPC factions would be fantastic! So, lets get to it!
First, how 'bout them Pigmen and Humans? How do we allow you to tell who's territory you're in? Whats the differences?
Well, for one, both have different building styles and use different materials. Humans would use Smooth stone, Wood Planks, and Glass for their buildings, which would be blocky (No MC curves). The Pigmen, on the other hand, would use Unprocessed Wood, Dirt, and Cobblestone to build their structures, which would be rough hut-like buildings.
Second, Humans will have Iron tools and Armor, and wear helmets and chest pieces when they march to war. Pigmen, on the other hand, use stone tools and wear leather armor, wearing mostly tunics, and sometimes pants. The Pigmen, though, would have slightly more health than Humans.
Now, onto other NPC groups.
First, Orcs. Yes, Orcs. They use Iron weapons that are slower than your normal sword, but do more damage. They wear Leather Tunics and Iron Helmets. For building, they use rough wood structures. Orcs have more health than Humans or Pigmen, but are slower and generally less intelligent, running headlong into fights.
Next, we have the Lizardmen. They only spawn in Jungles around Ruins. They wear no armor, but count as having helmet and chest piece. They carry Swords made of Gold and Obsidian. Lizardmen swords do a large amount of damage, but are slow. The Lizardmen Build large Pyramids and blocky stepped stuructures out of Stone Bricks and other materials found in ruins. They guard Ruins, and will attack if you enter the ruins.
Finally, the Undead. They live in dungeons and caves underground, consisting of the enemies that are already in the game, minus creepers. Also, a few changes are made, such as the inclusion of Skeletal Warriors, who are skeletons with Iron Swords and Wear various pieces of Iron armor, though their weapons count as stone and the armor is mostly cosmetic, only adding +1 heart to their health.
Now, these guys don't get along well. At all. This next part shows who is neutral, hostile, or friendly toward each other. (H=Hostile N=Neutral F=Friendly)
Obviously, no one is really happy with each other. Each group has soldiers. These patrol settlements, and on occasion go to war. If they do go to war, several villages will have all their soldiers leave, who meet up and then march towards the group they are going to. The group who is being marched on will rally soldiers, who meet the invaders in a large battle. Should the defenders be victorious, the invaders turn tail and run. If they fail, the invaders march on to the nearest city. The Soldiers there will defend it, but the invaders will steal from chests, possibly kill civilians (only Orcs and Undead), and sometimes burn the city down. The invaders will stop after 3 or 4 cities, returning with their loot, or if they are defeated. Should they be defeated, they will drop all their loot and run back towards their own city. Invaders will also run away if one of their cities is attacked. Lizardmen will never march to war, even against Orcs, but all Lizardmen are soldiers, and will attack anyone who marches too close to their ruins or cities.

I would just like pigmen and the undead, who should only live in huge caverns, natural or un. No humans or orcs, but I want a lizard mob before we get lizardmen.
Edit: I would like humans in multiplayer, but not in single.

You are suggesting that Skeletal Warriors do as much damage as zombies...?
The effects of armor on mobs is redundant. Just make it look like they are wearing armor and give them extra health.

I would want just pigmen or just pigmen and something besides everything you just said. Undead are all hostile already, orcs are generic, and I like being the only human.
That being said, I am blank on what the other NPC should be.

im all for more NPCs but not the ones you suggested.
Orcs are too every-RPG-gamish, and I want a lizard mob before we get lizard people.
On the other hand the rest of your idea was good. Maybe the villages could evolve (like millinere) and get stronger. they could then take over other villages and form a kingdom of sorts. I think that you should have a sertain relationship with the different villages (some naturally dont really like you and others will atack you on sight).
Good idea.

It could be like the major factions in Fallout: New Vegas. The Undead want complete domination, the Humans want to rebuild society and restore order, and the Pigmen want independence over their pork-greedy superiors.
