I'd like to suggest that putting gravel into an oven would melt it into stone, much like cobblestone does. This would be somewhat consistent with the reality model and provide an additional use for gravel.
Why would you ever want to do that, though? Gravel has it's own use, uniquely different from stone. I don't see why someone would want to get rid of a gravity block for an easily obtainable non-gravity block.

The difference is sand, in addition to being a gravity block, has the decorative value of being turned into glass. Since I rarely use flint (other than for :Flint and Steel: ), I usually consider gravel to be a sole-purpose gravity block, while sand has alternative value.
Why would it matter if it was an option? It doesn't, really, but I don't think it would be all that useful an addition to the game.

Filling in lava/water, creating gravel elevators to navigate large drops, used for traps, and hey, maybe some people like the way it looks.
EDIT: Granted, it could do with a better use, but I don't think smelting it to stone is it.
