Minecraft has done a great job simulating and, lets be honest here, improving upon the real world. A big part of this has been increasing the number and types of blocks and their various uses and natures. But we only, currently, are able to exploit two of the 5 common states of matter. (what with all that other stuff about hypersolids). Air exists but is not a usable resource.
Another problem that many have made suggestions for to modify include air travel. We all want something faster than walking. And train systems are great, hell mine is fantastic, but require a lot of work and are very limiting. Air travel seems like an obvious option but to my surprise this solution has not been suggested yet.
Here I would like to propose the inclusion of Gasses into minecraft, these gasses could be used in a number of ways which I will outline after a full description of my recommended gasses.
Helium
Helium would be a semi-clear gas, like a less opaque cloud of some off-color, found in clumps in caves underground it would be found floating near the ceilings or be found filling pockets of underground cave. Standing in Helium gas for a few minutes would have similar effects to drowning.
Propane
Propane would also be a semi-clear gas, much like an off color and less opaque cloud. Found in pools on the floors of caves.
Uses:
Helium is a lighter than air, and unlike hydrogen, non-flammable gas. It could be used to build dirigibles! it could also be used to create traps for mobs or players.
Propane could be used as a fuel for engines, or furnaces.
Air could also be harvested, as will be described momentarily, and used in underwater breathing apparatuses.
New Items and Blocks:

Gas canisters would be used to harvest and store up to 32 gas blocks, by means of a compressor.

Compressors would be powered by redstone. 1 canister would be placed inside them, and once triggered, would begin sucking gas out of the local area. It will only harvest 1 type of gas at a time, this is determined by which gas it starts harvesting in. Thus it would suck in only helium if it started with helium.
Oxygen and Propane would also be able to be harvested with this block.
Balloon
Balloons would be decorative items. They require 1 helium block from a canister.
Canister(h) = 5x string
They'd be 2 blocks tall, one block a string, the other a balloon. They could be walked through and would be largely for show.
Large balloons are step one in the construction of dirigibles. These are complex ships, and would require a great deal of effort to build.
Propeller

Propellers can't be placed alone, and are an item. However once attached to the following item they become usable for nothing other than propulsion! They can only be powered by propane (hence the empty canister in their production).

I don't think I'm the only one that wouldn't mind a faster boat for those big ass lakes. Here's the solution.

Finally after all these steps you have a working dirigible. It would move at the players command in place of their character like a boat. But fly through the air. Up and down movement could be handled through additional keyboard commands for elevation. It'd be less exciting perhaps than an airplane but I think it fits the setting better and works better within current controls. Faster than walking, big and floaty.

These are just some of the ideas I have come up with for the addition of gas, and only the use of 3 gases (one already being in the game). Perhaps others will come up with additional suggestions, and if I find them especially awesome I'll post them here.

Also the fifth state of matter is called a Bose - Einstein Condensate, and it only appears at temperatures a few millionths of a degree before absolute zero (on the Fahrenheit scale). That stuff does all sorts of wierd crap that you would usually only observe an atom doing. And if you want to get really technical and count the subclasses, there are like fifteen states of matter.

Antimatter is just the protons being negative and the electrons positive. It counts as a solid when its solid and a liquid when its liquid and so on.
